Article summary

A shallow, flat cast-iron surface makes it easier to approach food with a turner. The tradeoff is less containment for grease, liquid and crowded meals.

Sliding a turner under a pancake should not require negotiating a tall pan wall. The Lodge L9OG3 approaches that small annoyance with a shallow rim and a flat cooking surface. This 10.5-inch round griddle is worth considering for pancakes, tortillas and other foods you want to reach from the side. The reason to buy is access: if most of your meals involve sauces, deep oil or vigorous stirring, a conventional skillet is likely the more useful starting point.

The shallow rim leaves room for your turner

A low edge gives a spatula a flatter approach to the underside of food. That can be useful when a pancake needs support across its surface or a tortilla needs a quick turn. The griddle's shape also keeps the working area visually open.

There is a practical difference between having room to flip and fitting more food. A circular cooking area still imposes limits, and filling every available space can leave nowhere for the turner to go. Plan portions around both the food and the movement needed to handle it.

For a small breakfast, the open surface may be a convenient dedicated station. For a large group, a larger griddle or cooking in batches may be more realistic. The model name's nominal size is not a promise that a particular number of pancakes will fit, since their diameter and your preferred spacing vary.

A flat surface asks you to manage the heat

Lodge supplies the L9OG3 as seasoned cast iron and lists compatibility with stovetops, including induction, as well as ovens, grills and campfires. The seasoning is an oil-based cooking surface that needs ongoing care; it is not a maintenance-free coating.

Treat heating and food release as part of cooking rather than something the factory finish handles automatically. Follow the manufacturer's use instructions, give the pan appropriate time to heat and adjust the burner for the recipe. A higher setting is not a shortcut to a better pancake.

Consider the burner as well as the pan. The portion above the heat source and the outer area need not behave identically at every moment. Watch the food and adjust your arrangement rather than assuming a flat surface produces a perfectly uniform result without attention. This is a useful everyday cooking tool, but it does not remove technique from the process.

Low sides are a limit when liquids enter the meal

The same edge that helps a turner also provides relatively little containment. Think carefully about recipes that release substantial liquid or involve lots of oil. A deeper skillet may be easier to manage for those tasks.

There is also less protection against nudging food over the rim. Move deliberately when turning or transferring a meal, and leave working room instead of pushing ingredients to the very edge. A stable position on the cooktop matters.

The cast-iron handle needs appropriate heat protection. Before cooking, check that its position will not interfere with nearby cookware or extend into a busy route past the stove. If you intend to carry the griddle to a serving area, plan a heat-safe landing place first. Its familiar frying-pan outline should not encourage treating a hot iron handle like a cool insulated one.

Give it a regular job and a storage place

This is a persuasive second pan when pancakes, tortillas or similar flat foods appear often enough to justify dedicated cookware. Its low profile can also be convenient in a cupboard, provided the handle and overall footprint fit the available space.

After use, follow Lodge's hand-wash, dry and oil instructions. Drying is part of the routine, not an optional finishing step before leaving the pan in a stack.

Confirm L9OG3 and the 10.5-inch version before comparing delivered prices. Choose it for frequent flat-surface cooking and comfortable flipping access. Keep a deeper skillet as the priority if your kitchen needs one pan for a broad mix of sautéing, sauces and shallow frying.
