Microplane Premium Classic Zester: Fine Citrus & Cheese
THE BUYING TAKE
Choose the Premium Classic when fine zest or fine grating is a recurring job; keep a box grater for vegetables and cheese when bigger shreds are the point.
Best for
Cooks who frequently zest citrus or finely grate hard cheese, ginger, garlic, nutmeg, or chocolate over finished dishes and mixtures.
The trade-off
The narrow rasp is not a coarse-shredding substitute, its teeth are genuinely sharp, and fine residue can lodge around the blade openings; the protective cover belongs back on for drawer storage.

Article summary
The long, narrow Microplane turns citrus peel, Parmesan, ginger, garlic, nutmeg, and chocolate into very fine pieces. It makes sense when the ingredient should disappear into or lightly finish a dish, not when you need coarse shreds.

A recipe may call for lemon flavor without asking for strips of peel. Parmesan can need to disappear into a cloud over pasta rather than land as thick shreds. The Microplane Premium Classic Zester is built around that finer job: a long photo-etched rasp surface that removes small pieces as an ingredient passes across it.
That distinction matters more than the brand name. Buy it when fine texture is what you repeatedly need; keep a box grater nearby for the larger cuts it does better.
Use it when the surface is the ingredient
Citrus zest is the easiest reason to understand this tool. The goal is the colorful outer peel, which carries aromatic oils, rather than a wide strip with a thick layer of bitter white pith attached. A narrow rasp gives you a long working area for moving a lemon, lime, or orange across the teeth while you watch how much colored peel remains.
The same fine-cutting idea applies to ginger and garlic when you want small particles to spread through a dressing, marinade, or sauce. Microplane also lists hard cheese, chocolate, and ginger among the Premium Classic's intended uses. Those are different ingredients, but the useful result is similar: fine pieces that distribute quickly instead of standing out as large chunks.
That does not make every ingredient interchangeable. Stop once the useful outer citrus layer is gone, and keep fingertips away from the teeth as a small ingredient gets shorter. A sharp grater still needs a safe amount of food between your hand and the blade.
Parmesan shows why fine and coarse are different jobs
Run a hard cheese such as Parmesan across a fine rasp and the result is suited to finishing a bowl of pasta, soup, eggs, or vegetables. The point is not to produce a pile of long strands for melting over a pizza. It is to make a small amount of hard cheese spread across more surface area.
That is where a second grater can still earn its place. Epicurious found rasp-style graters especially strong for fine grating and zesting, while an all-purpose box grater handles a broader range of coarse shredding tasks. If you frequently shred potatoes, carrots, or a block of softer cheese, do not buy the Premium Classic expecting one narrow surface to replace every side of a box grater.
The long shape works over the food you are already making
The Premium Classic is about 12 inches long, with an 8-by-1-inch grating surface. That shape is useful for holding the tool over a bowl or finished plate and adding a small ingredient where it will be used. Rubber feet at the end are designed to add stability when the zester is braced against a surface.
The soft-touch handle gives one end a clear place to hold. The other end is still a field of sharp metal teeth, so the included reusable cover is not decorative packaging. Put it back on before the tool goes into a drawer with other utensils. Microplane specifically includes the cover for blade protection and safer storage.

Cleanup is easy, but not magically residue-free
Microplane marks the Premium Classic dishwasher safe. A recent Food & Wine long-term review also praised the tool but noted that fine residue can sometimes need attention around tight areas. That is a sensible limitation for a rasp whose job is to create very small particles.
Rinse soon after grating sticky garlic, ginger, or cheese so those particles do not dry in place. If you use the dishwasher, follow the manufacturer's care instructions and retrieve the tool by the handle rather than the teeth.
Choose this Microplane when fine zest and fine grating recur often enough to justify a dedicated surface. If most of your grating ends in big shreds for salads, hash browns, or melting cheese, a coarser tool is the better first purchase.
